Today I made something different for breakfast. Poached eggs on bagels sprinkled with old bay seasoning. I was a bit scared of the poaching process at first but it was way easier to do than I first thought.

So here we go, breakfast for one:

2 eggs

1 bagle

a pinch of old bay for each egg

Crack the eggs into cups and bring the water to a boil. Stir with a spoon to create a whirlpool (you don’t have to whisk it all that hard or fast) and carefully pour in the eggs. Lower the heat to low and let poach for about two minutes. Cut up the bagel and put the halves on a plate. Serve the eggs and sprinkle with old bay.

Easy wasn’t it?

The whites will be set and the yellow will be runny. Delicious :)

The colder the morning the warmer the food.

Although I didn’t have these for breakfast they still fit in the previous sentence. It is indeed cold today and it calls for warm breakfast and lunch.

Fast and classic hash brownes with fried onions, really good. I promise. I got inspired watching Alton Brown making his “man food hash brownes” frying them in bacon fat. Neither do I have bacon, so I had to take a different approach.

hash ingredients:

4 baby red potatoes

a quarter of an onion

salt

Heat up a small frying pan with some oil in it to medium heat. While it’s heating up start shredding the potatoes (unpeeled!). I used a food processor and it worked alright. After shredding them you have to get rid of excess water and the easiest way to do this is to put them in a towel and twist out the water. Works with paper towels as well, but they will most likely break and you’re in danger of having potatoes all over the place.

Put the potatoes in the pan and distribute them evenly, sprinkle salt and cook for about five minutes. While cooking side one – chop up the onion.

Flip the potatoes and sprinkle with salt.

For me personally they always break so if you have any tips on how to not have them breaking I’m all ears :)

Cook for another 3-5 minutes and serve.

In the same pan, throw in the onions and fry them up until soft. You can raise the heat a bit if you like.

Great breakfast and lunch!

Tomatoes
Garlic olive oil

How I did it:
I spread butter on both slices of bread (for moisture and for ingredients to stick) and put two slices of cheese on one bread slice. On top of the cheese I put two-three slices of the salami. Cut up about half a tomato for the sandwich and put those slices on top of the salami and top it all off with some oregano. Put the sandwich together and have a frying pan ready on low/medium heat. Sprinkle some garlic olive oil in the pan, it matches this so well! And let fry for a few minutes on each side, either until the cheese melts or until the bread is the beautiful brown colour you want it :)

Fast & easy! And very, very tasty. You could probably replace the oregano with basil for more flavour and even switch the cheese for a good mozzarella and maybe even some sun dried tomatoes to make it more Italian style.
