Pretty much the same ingredients as from last post, I will re-list though. But also to make a note: Black olives probably would have tasted better than kalamata olives in this recipe.

For the pasta recipe:

1 cup of penne pasta

1/3 cup kalamata olives (10-15 olives)

1/3 cup sun dried tomatoes

1 tsp salt

Bring water to a boil in a big pot, add pasta and salt. Let boil for about 9 minutes.

While pasta is boiling, pit the kalamata olives. See previous post for pitting tips. Cut up the sun dried tomatoes into little squares.

Drain the pasta and mix all the ingredients together. And if you have any, garnish with basil and feta cheese. It shall be delicious!

American style dough and European style toppings, but American style amounts :P (so much for “less is more”, haha)

Its a fairly simple recipe :)

(This recipe easily serve 4-6 people)

Ingredients:
3 cups of bread flour
1 package of dry active yeast (the recipe I did said 1/4 oz but I used 5/16 oz no noticeable difference)
2 tablespoons of oil (I prefer using olive oil)
1 tablespoon of sugar
1 teaspoon of salt
1 cup warm water (for the yeast)

How I did it:
First I mixed the flour, sugar and salt together in a big bowl. Separately I mixed together the warm water and yeast. When the yeast had fully dissolved I put it into the flour mix and added the two tablespoons of olive oil and mixed it around until it was a smooth ball of dough (I also added some extra olive oil when the ball was done, in my experience pizza dough has always been shiny with grease and that’s how I will continue to have it) Cover up the bowl with a towel or even plastic wrap and let rise for about 30 minutes.

Preheat oven to 375 F.

Dump the ball of dough on a smooth surface, like a big table (or in my case a bar) and work the dough around a little bit. Add tidy bits of flour if still sticky. Start flattening it out to a pizza shape or if you’re doing it in a pan just put it in a pan and flatten it out to the corners. Here I tried to be Luigi and toss my pizza but I will not do that again, I failed miserably – its a lot harder than it looks!

When pizza was flattened out and in place I added my toppings. I chose not to make a “traditional” pizza but more of a “Me” pizza, so I added tomato sauce on bottom. Onions, shrimp and jalapeños on top of that. A LOT of mozzarella cheese and lastly some mushrooms and salami.

Place in the middle of oven for about 20-25 minutes (until cheese turns golden brown is a good indicator for you who forget time)

I must say this was my most delicious creation yet, although it might just have to do with my pizza craving growing bigger over the past few months.

I boiled two potatoes for about 20 minutes. Cut them up in a bowl and fried them with basil, garlic, oregano – all in olive oil. Added some avocados, to soften them.

Tired of frying them, bake them in the oven. Tired of baking them in the oven, make a gratiné, etc.. etc..

I made potato wedges for lunch and it was rather quick, easy and it tasted really good! All you need is potatoes ;)

The potatoes: Just cut them up in wedges while heating up the oven to 425 degrees Fahrenheit. The wedges doesn’t really have to be wedges, as long as each potato is split into a few pieces. Sprinkle salt on top and any other desired spice (i.e. allspice, garlic pepper. Whatever suits your taste buds ^^)

In the oven: Bake them in the middle of the oven for about 20 minutes.

voilà!

Served with red onions, cilantro, a few basil leaves, salt and pepper. Yummy!

And again I impress myself and the people around me. Great.
Today I bought some steak, since I’m a man I need protein, right? ;)

Started off with boiling up some sliced up potatoes in half & half milk/cream though. Added garlic to the mix and some salt and pepper. Let them boil until very soft, it was almost like mashed potatos.

Poured up the potato mix in a long pan and added some mozzarella on top. I was supposed to get some shredded cheese but I forgot to -_-

Put the mix in the oven at 482F for about 10 minutes to get a nice light brown crust.

While baking the potato mix I fried the steaks. Some olive oil, sliced garlic, sliced chilli, a lot of thyme and finished off with browning the mushrooms. Mm..mm..mm!

Once again this was a under $20 meal and took about 40-50 minutes to make. I wish I made more because its all gone u_u
