			<content:encoded><![CDATA[<p>Last night I cooked up some chicken for the first time in a very long time. I&#8217;m not that big on chicken but after last night I might have to reconsider that statement!</p>
<p>Ever since &#8220;Food, Incorporated&#8221; I am very peculiar about eating organic meat. I was before even, but mostly because it tasted odd or bad even. Last night I had to swallow my pride and cook Tyson&#8217;s chicken breasts; 1. which in the past has tasted bad to me 2. Tyson&#8217;s is portrayed to be one of the worst food companies out there by the film. But we just got out of a recession (yes, I am making an excuse!)</p>
<p>Back to cooking.</p>
<p>Here&#8217;s what I used:</p>
<ul>
<li>3 chicken breasts</li>
<li>1 lemon</li>
<li>sage</li>
<li>rosemary</li>
</ul>
<p>Start off with cutting off any white parts of the meat and then cut a slit on the side of the breast. Kind of like cutting a ciabatta. Start stuffing the breasts with the sage leaves, try to lay them flat in the cavity and then put slices of lemon on top of the sage. Close the breast up as well as you can and squeeze the rest of the lemon over the meat. Sprinkle rosemary until pretty much covered each breast and then put in oven at 350F for about 45 minutes. It can be tricky turning the chicken when it&#8217;s stuffed like this but it shouldn&#8217;t be any problem unless you&#8217;re like me and accidentally cut straight through the chicken breast and end up with a two pieced breast. Oops!</p>

<p>Its pretty simple actually, takes about 30-40 minutes total maybe.</p>
<p>What you need is a big pan, two chicken fillets, one bell pepper (any colour you&#8217;d like. I prefer yellow, but green and red works well too!), one mango, mango chutney (Indian mango preserve), sambal oelek, soy, water, and crème fraiche.</p>
<p>Cut up the fillets into half inch thick slices and put them in the pan. Fry them so they are completely white, and not on high heat either. You don&#8217;t want them to burn and get dry. When all white, add half a cup of water and about one tablespoon of soy sauce. Put on a lid, turn down the heat. And let boil for about 10-15 minutes.</p>
<p>While the chicken is boiling cut up the vegetables and the mango. Put them all together in a bowl.</p>
<p>Now is a good time to start the rice :)</p>
<p>Take off the lid off the pan, add one cup of crème fraiche, one or two tablespoons of mango chutney (I like it so I use two table spoons for flavour ^^) and one teaspoon of sambal oelek. Stir around until crème fraiche is liquid and tan coloured from the sambal and chutney. When brought to a boil add the mango and the bell peppers. Let boil for a few minutes on low heat.</p>
<p>I served this with rice, mango chutney and some small red tomatoes. It was really good and I actually overate &#8211; so its literally dangerously good.</p>

<p>It is fairly simple to make. I say this because I almost never make chicken, I&#8217;m not a big fan, but it was really cheap (about 2 dollars for 2 lbs of wings!)</p>
<p>Here&#8217;s how it went down;<br />
First cut the wings in half and also cut off the tips since there&#8217;s nothing to eat really at the tips.<br />
Put them all in a big bowl.<br />
In a smaller bowl mix about a cup of honey, 4-5 tablespoons of soy and then mix in some garlic or ginger. I like my food spicy so I also added some rooster hot sauce :D</p>
<p>Then just put it in the middle of the oven for about 40-50 minutes on 350 F they come out perfect.</p>

			<content:encoded><![CDATA[<p>For lunch this Saturday I made something quick and easy and most important delicious!</p>
<p>This meal took me less than 15 minutes to make and less than 5 to eat, that&#8217;s how good it was ;)</p>
<p><strong>The pasta: </strong>Like with any pasta just boil until desired softness, or crunchiness if you like it crunchy :S</p>
<p><strong>The chicken: </strong>While the pasta is boiling, fry up some chicken strips (or a whole breast fillet and later cut up to strips) and add some salt and pepper and a tiny bit of oregano.</p>
<p><strong>The plate: </strong>When the pasta is done, drain the water and while its doing that put the chicken in the pot. Pour in some spinach, about a cup, and add a spoonful of pesto. Mix around a little bit and add the pasta, mix around some more and serve. I topped my dish off with some sun dried tomatoes because they match and are delicious.</p>
